Skillet-Finished Flank Steak Tagliata with Gremolata Penne
Tagliata is a classic Italian technique where the meat is sliced thin and served over a bed of greens or pasta. Here, I'm using a vibrant herb-infused oil to lift the deep, savory notes of the flank steak.
Ingredients
Mise en Place — prep before you cook
- ¾ pound Flank steak
- ½ pound Penne pasta
- 4 tablespoons Unsalted butter
- 3 cloves Garlic, sliced paper-thin
- ½ cup Fresh parsley, finely chopped
- 1 teaspoon Italian seasoning
- 2 tablespoons Grapeseed oil
- ¼ cup Parmesan cheese, shaved
- 1 teaspoon Kosher salt
- ½ teaspoon Black pepper
- ½ Red onion, thinly sliced
Method
Follow each step for the best flavor and texture.
- Season the flank steak with salt, pepper, and the Italian seasoning, pressing the herbs into the meat.
- Cook the penne in boiling salted water until al dente; drain and set aside.
- Heat grapeseed oil in a cast-iron skillet over high heat; sear the flank steak for 3 to 4 minutes per side for a medium-rare finish.
- Transfer the steak to a plate to rest.
- Lower the skillet heat to medium and add the butter; once foaming, add the red onion and sliced garlic, cooking until the garlic is golden and crisp.
- Add the cooked penne and chopped parsley to the skillet, tossing vigorously to coat the pasta in the infused butter.
- Slice the flank steak very thin against the grain at a 45-degree angle.
- Plate the pasta and arrange the steak slices over the top, finishing with shaved parmesan and any remaining herb butter from the pan.
Chef Notes
Grapeseed oil is my choice for searing flank steak because of its high smoke point, which allows for a hard sear without the oil breaking down.
