A greener, heartier take on Caesar made with kale, spinach, arugula, broccoli, avocado, Parmesan, and a creamy homemade Caesar dressing.

Ingredients

For the Salad

  • 4 cups kale, stems removed and leaves chopped
  • 2 cups baby spinach
  • 2 cups arugula
  • 1 cup broccoli florets, finely chopped
  • ½ avocado, diced
  • ¼ cup shaved Parmesan cheese
  • Freshly ground black pepper, for finishing

For the Creamy Caesar Dressing

  • 1 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • ¼ cup grapeseed oil
  • 1 garlic clove, finely minced
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup finely grated Parmesan cheese

Method

Prepare the kale: Place the chopped kale in a large mixing bowl. Add a small pinch of kosher salt and gently massage the leaves for 30–45 seconds to soften them slightly.
Build the greens: Add the spinach, arugula, and finely chopped broccoli to the bowl with the kale.
Make the dressing: In a medium bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, grapeseed oil, garlic, Worcestershire sauce, salt, and black pepper until smooth.
Finish the dressing: Stir in the grated Parmesan cheese. Taste and adjust with additional lemon juice, salt, or black pepper if needed.
Dress the salad: Drizzle about half of the Caesar dressing over the greens and toss thoroughly. Add more dressing as needed until the greens are evenly coated but not weighed down.
Add the avocado: Gently fold in the diced avocado so the pieces remain intact.
Finish and serve: Transfer the salad to a serving bowl or individual plates. Top with shaved Parmesan and freshly ground black pepper. Serve immediately.

Make the Greens Work for You

Massage the kale before adding the softer greens. Start with less dressing than you think you need and build from there. For extra crunch, add toasted nuts, pumpkin seeds, crispy chickpeas, or gluten-free croutons.

Kale and broccoli are sturdy enough to hold creamy Caesar dressing without immediately wilting, while arugula adds a natural peppery bite.

If the salad tastes heavy or flat, don't automatically add more dressing. Try a small squeeze of fresh lemon first.
