Grilled Ginger-Garlic Chicken with Charred Bok Choy
"For this Asian-inspired preparation, I focus on the interplay between the smoky char of the grill and the savory depth of soy and sesame. It is a light yet incredibly aromatic meal that highlights the natural sweetness of grilled greens."
Ingredients
Mise en Place — prep before you cook
- 2 chicken breasts, pounded to even thickness
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 2 heads bok choy, halved lengthwise
- 2 tablespoons neutral oil
- 1 teaspoon chili crisp
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Method
Follow each step for the best flavor and texture.
- Whisk together the soy sauce, sesame oil, honey, and half of the minced garlic in a bowl. Marinate the chicken for fifteen minutes.
- Toss the halved bok choy with neutral oil, the remaining garlic, salt, and pepper.
- Heat the grill to medium-high. Place the chicken on the grates and grill for six to seven minutes per side until fully cooked.
- During the last four minutes of chicken cook time, place the bok choy cut-side down on the grill until the leaves are wilted and the stalks are charred and tender.
- Remove everything from the grill and let the chicken rest for five minutes.
- Elevated Element: Drizzle the chili crisp over the charred bok choy to provide a textured heat contrast to the sweet soy glaze.
- Optional Eclectic Twist: Finish with a squeeze of fresh orange juice over the chicken for a bright citrus lift.
Chef Notes
Pounding the chicken to a uniform thickness ensures it cooks evenly without the edges drying out before the center is done.
Did You Know?
Bok choy is part of the cabbage family, but its tender leaves and crisp stalks make it especially grill-friendly. The heat softens the greens while giving the stalks a lightly sweet, smoky finish.
Flavor Notes
Sweet honey, savory soy, toasted sesame, garlic, and smoky char create a clean but layered flavor profile. The chili crisp adds heat, crunch, and a bold finishing texture.
Spice Enhancement
Chef’s Optional Enhancement: Add a light sprinkle of Forks247 Smoke & Heat BBQ seasoning to the chicken before grilling for a subtle smoky backbone.
Pantry Substitute: Use a pinch of smoked paprika with a small dash of ground ginger or crushed red pepper.
