Whipped Feta Tzatziki with Roasted Garlic & Fresh Dill

Around the Table · Greece

Tzatziki proves how refreshing simple ingredients can be, but I wanted to give this Greek favorite a little more personality. Whipping feta into thick Greek yogurt creates a rich, creamy base, while roasted garlic brings mellow sweetness. Fresh cucumber, dill, mint, and lemon keep every bite bright. Serve it with fresh vegetables, warm pita, or alongside grilled meats and seafood.

Method

Follow each step for the best flavor and texture.

  1. Roast the Garlic. Preheat the oven to 400°F. Slice the top from the garlic head to expose the cloves. Drizzle with 1 tsp of the measured olive oil, wrap loosely in foil, and roast for 25–30 minutes until tender and lightly golden. Cool, then squeeze out 2–3 cloves.
  2. Prepare the Cucumber. Coarsely grate the cucumber and place it in a fine-mesh strainer. Sprinkle lightly with salt and allow it to rest for 10 minutes. Transfer to a clean kitchen towel and squeeze firmly to remove excess moisture.
  3. Whip the Feta Base. Add the Greek yogurt, crumbled feta, 2–3 roasted garlic cloves, remaining measured olive oil, lemon juice, and lemon zest to a food processor. Blend until smooth and creamy, scraping down the sides as needed.
  4. Fold in the Freshness. Transfer the whipped mixture to a bowl. Fold in the drained cucumber, chopped dill, mint, and black pepper. Stir gently until evenly distributed.
  5. Balance the Seasoning. Taste before adding any salt, since feta already contributes salinity. Adjust the lemon juice if a brighter finish is desired. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  6. Finish and Serve. Spoon the chilled tzatziki into a shallow bowl and create a swirl with the back of a spoon. Drizzle with extra virgin olive oil and garnish with fresh dill, diced cucumber, and a light pinch of dried oregano, if desired.

Chef Notes

Squeeze the grated cucumber thoroughly to prevent a watery dip. Use block feta packed in brine for smooth blending and fuller flavor. Roasting garlic creates mellow sweetness that balances the yogurt and feta. For a sharper garlic flavor, replace one roasted clove with a little freshly grated raw garlic. Chill for at least 30 minutes before serving.

Did You Know?

Traditional Greek tzatziki combines thick yogurt, cucumber, garlic, and herbs. Feta isn't a standard ingredient, but whipping it into the yogurt creates a richer, Greek-inspired variation with a pleasant tangy finish.

Flavor Notes

Tangy feta and creamy Greek yogurt provide a rich, savory foundation. Roasted garlic adds gentle sweetness, while cucumber introduces a cool, crisp character. Dill, mint, and lemon brighten the mixture, and extra virgin olive oil rounds everything out.
