Ingredients

  • 1 tbsp olive oil

  • 1 small onion, sliced

  • 3 cloves garlic, smashed

  • 1-inch piece fresh ginger, sliced

  • 6 cups vegetable broth (or water + bouillon)

  • 1 bunch kale or Swiss chard, chopped

  • Zest + juice of 1 lemon

  • ¼ tsp white or black pepper

  • Salt, to taste

  • Sliced scallions (optional)

Instructions

  1. Heat olive oil in a medium pot over medium heat.

  2. Add onion, garlic, and ginger. Sauté 3–4 minutes until fragrant.

  3. Pour in broth and bring to a gentle simmer.

  4. Add greens and cook 3–5 minutes until just tender.

  5. Stir in lemon zest and juice. Season with salt and pepper.

  6. Serve hot, topped with scallions if using.
