Charred Corn & Heirloom Tomato Salad with Basil-Lime Vinaigrette

 

Ingredients:

  • 4 ears sweet corn, husked

  • 1 pint heirloom cherry tomatoes, halved

  • ½ small red onion, thinly sliced

  • 1 avocado, diced

  • 2 tablespoons olive oil

  • Juice & zest of 1 lime

  • 2 teaspoons apple cider vinegar

  • 1 tablespoon honey

  • 1 tablespoon fresh basil, chopped

  • Salt & freshly ground black pepper

Instructions:

  1. Heat a grill pan or outdoor grill to medium-high. Lightly brush corn with olive oil and char on all sides (about 8 minutes).

  2. Slice kernels from cobs and transfer to a large bowl.

  3. Add tomatoes, onion, and avocado.

  4. In a small jar, whisk olive oil, apple cider vinegar, lime juice, zest, honey, basil, salt, and pepper.

  5. Toss salad with vinaigrette and serve slightly warm or chilled.
