Charred Corn & Heirloom Tomato Salad with Basil-Lime Vinaigrette
Ingredients:
4 ears sweet corn, husked
1 pint heirloom cherry tomatoes, halved
½ small red onion, thinly sliced
1 avocado, diced
2 tablespoons olive oil
Juice & zest of 1 lime
2 teaspoons apple cider vinegar
1 tablespoon honey
1 tablespoon fresh basil, chopped
Salt & freshly ground black pepper
Instructions:
Heat a grill pan or outdoor grill to medium-high. Lightly brush corn with olive oil and char on all sides (about 8 minutes).
Slice kernels from cobs and transfer to a large bowl.
Add tomatoes, onion, and avocado.
In a small jar, whisk olive oil, apple cider vinegar, lime juice, zest, honey, basil, salt, and pepper.
Toss salad with vinaigrette and serve slightly warm or chilled.
